This playful dessert reimagines fall cider as a translucent, shattering “glass.” Isomalt helps to keep the feel crisp whilst a handy guide a rough cider aid brings orchard flavour ahead. A whisper-light cinnamon mud made with maltodextrin dissolves right away, leaving a heat spice end.

Apple Cider Glass

Isomalt: 200 g
Cloudy apple cider: 120 ml
Malic acid (not obligatory, for tartness): 1 g

Floor cinnamon: 6 g (about 2 tsp)
Maple syrup (very mild drizzle, not obligatory): 3–4 g
Tapioca maltodextrin (N-Zorbit): 25–30 g

Freeze-dried apple powder (not obligatory): 1 tbsp

Silicone baking mat or silicone moulds

Means

Scale back the cider: Simmer apple cider over medium warmth to 30–35 ml. Cool. Stir in malic acid and a pinch of salt.
Soften isomalt: Upload isomalt to a blank saucepan. Warmth gently to 165–170°C, swirling (don’t stir). Take away from warmth, let bubbles settle 20–30 seconds.
Flavour and solid: Moderately whisk within the cooled cider aid (it’s going to sputter reasonably). Pour onto a silicone mat and unfold very skinny with an offset spatula. Intention for near-transparent.
